ABSTRACT

Kelepon tail is one of the traditional cake in Martapura Banjar district. This cake is quite famous in the area Martapura because almost every new person who comes to Martapura interested to buy this cake. New phenomena encountered in the area Martapura is kelepon sold around Traffic Light (Traffic Light) Sekumpul. Sales kelepon in the streets allows easy snacks to be contaminated by various pollutants, originating from dust and exposed to dirty air. Such conditions allow Biological contamination on kelepon sold. This study aims to determine the total number of mold and yeast on kelepon sold around traffic lights Sekumpul May 2016 and its percentage. This study is a descriptive survey. The population in this study are all production kelepon sold around traffic lights Sekumpul taken by total sampling of 10 samples that kelepon whose brands production. Samples taken in the morning and afternoon with a different brand. The data collection is done by observation, questionnaires, laboratory tests through media Saboraud Dextrose Agar (SDA). Results of research on kelepon of 10 samples with different brands means that sample in the morning and during the day that is 10% below the maximum limit kelepon and by 90% kelepon that exceeded the maximum number of fungi and yeasts. It is thought to have come from the factors that allow contaminants such as lack of attention to cleanliness at the time of sale and in the process of making less hand hygiene and the place of manufacture kelepon. From the seller's results are expected to pay more attention to the cleanliness of pastries that are sold and for the health department to conduct oversight and handling of materials processed foods.
